The Original
Salzburg confectioner PAUL FÜRST created the now world-famous Salzburger Mozartkugel in 1890. His exquisite creation made of a marzipan and pistachio core wrapped in nougat and dipped in dark chocolate quickly became the most popular sweet in the city.

"ORIGINAL SALZBURGER MOZARTKUGEL"
Original Salzburger Mozartkugel
Made fresh every day
A pioneer of his time, Salzburg confectioner PAUL FÜRST laid the foundation for the success of the “Original Salzburger Mozartkugel”. Imitators quickly followed, but the original is still made using Fürst’s recipe – and remains simply unmatched!
When it comes to Mozartkugeln, our customers are not willing to make any compromises. It must be the ORIGINAL: wrapped in silver foil with a blue Mozart portrait – and made by Confiserie FÜRST in Salzburg Old Town. “There are many Mozartkugeln – but only one original!” says Martin Fürst, the fifth-generation owner of the family-run company.
The historical recipe book
From Paul Fürst’s workshop
The historical recipe book from Paul Fürst’s workshop, dating from 1915, is well-protected by the Fürst family. The comprehensive recipe collection is compiled in a linen-bound book from the Franz Hackenbuchner shop (established in 1860) in Getreidegasse, Salzburg.
The numerous recipes include the historical weight units Loth and Pfund. Individual prices for cakes and chocolates are given in crowns and heller, the currency of the time.
On page 111, the recipe for the Original Salzburger Mozartkugel was recorded in cursive handwriting. The ingredients and steps captured there are still used today.
